Semifreddo cakes and slices
Semifreddo desserts are compositions made with gelato, that has just been churned, and other elements that make it more rich. You can either use a specific flavor or a “Fiordilatte” as basic ingredient, with the addition of pastes and other ingredients according to the desired result.
Gelato-filled fruit
Many different types of fruit can be used for this kind of preparation and some are particularly suited to special occasions (like tangerines or pineapples at New Year’s Eve dinners – or other large fruit – for buffets and banquets). Fresh fruit can be cut in various ways, according to the end result you wish to obtain. Having cut the fruit, remove any seeds, hollow it out, and freeze (including the peel), taking care to preserve the original shape as far as possible. Then make a sorbetto using the pulp and juice you have just removed and when it has reached a suitably cold temperature (-20°C) use it to fill the fruit. This kind of gelato format is ideal for numerous occasions and is always extremely popular. Many master gelato makers have specialised in this area and have been extremely successful.

Gelato is ideal too for all the traditional festivities and special occasions, such as confirmations, baptisms and birthdays. In fact, there are innumerable ways in which classic cakes can be decorated or filled with gelato to end an important meal in style.
